Pizza dust is among the finest varieties of dust

"Everyone's arguing about politics!" the leadership of the Nexo Dallas Open exclaimed. "We could all use something to eat."


The event is starting this weekend at The Star in Frisco.



It's possible I am not a strong tennis player, so after speaking with a couple players, I wandered into a different part of the Dallas Cowboys' campus. Loyal Scaiaholics will recall where I am a star is trying new food at sporting events.


"You know how to get reporters to show up at your events?" Edward R. Murrow once told a class of people studying public relations for the purposes of this blog. "Serve free food. Also an open bar."



We were presented with champagne and a variety of mixed drinks for research.


Last year, the Texas Rangers introduced lobster. Jerry Jones declared, "Lobster is so passe. Let's bring in some caviar for the tennis fan."



The caviar isn't real caviar. It's "beluga lentils," beans that serve the purpose of caviar. I don't know what caviar tastes like, so they could have told me it was real. I'd have looked thoughtfully in the distance, nodded and said, "Oh, yes, I'm definitely tasting fish eggs, which are a delicacy for some reason."


I focused on the true delicacies. Among them is chicken parm pizza.


The executive chef at The Star says they've spent months refining the menu for the tournament. At a lot of these food events, they explain they won't take away the concessions staples. Your hot dog and beer are not going anywhere. They're just adding some variety and keeping up with current trends.


On that pizza, you'll notice some magic dust. The chef, Andrew Trollinger, says, "people go crazy when you put a dust on a pizza," so he added a parmesan dust.


Another trendy item, so trendy it showed up at the State Fair of Texas, is Dubai chocolate. The crew at Legends will be serving tennis balls made of the stuff.


The pastry chef says they use silicone molds to preserve the shape and then coat the ingredients (which she named, but they're essentially just different varieties of deliciousness) with a mirror glaze made out of white chocolate.


Since another trend is posting your food on Instagram, they know getting something to eat is now an event. I'm not above that, either.



You'll notice that salad at the end. Legends is also providing food for the players, so Trollinger says they were seeking out some material that might be considered more appropriate for the athletes. But he says they're also trying to meet a growing demand for better options, so they've introduced a kale salad. The kale salad just might not be as exciting as Dubai chocolate coated with white chocolate.


And when I tried the Dubai Chocolate Tennis Ball (to help you, the consumer, make an informed selection) I learned the white chocolate really enhances the structural integrity of the mousse within.
